Ingredients 250g Goa sausages 2 Large onions peeled and sliced 1 red and 1 green chilli sliced 2 medium potatoes peeled and small diced 1 small bunch of coriander

Method Add the sausage to dry frying pan and stir on gentle heat until oils permeate out of the sausages for approx 4 minutes.
Add onion and potato on medium heat and fry together until both start to brown (about 6mins.)
Add sliced chillies and cook stirring for 5 minutes. Scatter chopped coriander on top and serve.
